So how to cook them? It's been years since I've done anything out of my usual paradigm for cooking fish; that is, I broil, grill, bake, or steam. "To hell with it," I said. "I'm gonna have me some FRIED fish!" . . . → Read More-->>>: Pan-Fried Croaker – With a Twist!

Armed government agents burst through a door, weapons drawn. Commands are barked to the individuals there to get on the floor. The agents keep their firearms leveled at the perpetrators while they search for contraband. The booty is confiscated and eventually destroyed. The perps are arrested and fa...

The Best Fish Tacos Ever. Really!

Irene K. posted an article on - Jul 4, 2011, 7:57 am
In fact, the only difference between my homemade nuggets of deliciousness and those that I had at that little cart is that the fat I used for frying. I used an olive oil/canola blend that I purchased at Smart N Final instead of the original lard. "Health," you know. . . . → Read More-->>>: The Be...

Salsa Sunday Fun!

This most basic of Mexican salsas was one of the first I learned how to make in my early years in California. Pico de Gallo is the duct tape of salsa. In its most basic form (white onion, tomato, cilantro), it is the color of the Mexican flag. . . . → Read More-->>>: Salsa Sunday Fun!

A Honey of a BBQ Sauce

I don't usually do recipes, but I wanted to share this one. In most parts of the country, BBQ season is still several freezing months away, but for those of us in the sunny Southwest, it continues year round. Don't hate me because I'm warm! . . . → Read More-->>>: A Honey of a BBQ Sauce

From Soup to Bat Nuts to Charcuterie – Happy New Year!

Irene K. posted an article on - Jan 8, 2011, 4:30 pm
Looking at a small pile of sheep's eyeballs carefully packaged in the Hallel market on Spring Mountain made me think about using "out of the box" ingredients. Oh - don't worry. I can guarantee that there will be no "100 Exciting Ways to Cook Eyeballs" anywhere in the Vegas Wineaux universe. Well, I ...

In the Laboratory – My Soupy Weekend

I decided to experiment with a few things over the long weekend and came up with a bunch of great stuff. All successful, which surprised me, since I have a knack for trying out new experiments which really do look or taste like something that's come out of the mind of Boris Karloff. This weekend, ho...

Whether it's a stock made up of fish parts, chicken scraps, or the bones of herbivores; whether it's made in a couple of hours or if there's a pot always simmering on the back burner - in some places, the same pot will simmer for years - without good, nourishing stock, soup would be little more tha...

That's a good, easy-to-make chili, but it's not "Challenge" chili. It's sitting in front of the TV with a beer chili. . . ....
