I had originally made a zaar recipe, but then realized I had made a HUGE mistake and it turned out FANTASTIC. The toffee has the best soft crunch. I made it again correctly and it was not as good, so with the mistake I think I can call it my own now?? -- posted by Japanese Delight

Barb asks: Why is it when I make English Toffee, after cooling in the refrigerator, the chocolate wafers that I melt on top of the caramel and spread smooth…ends up separating off the caramel entirely when I break it into pieces? I waste so much each year. Any helpful tips would be greatly appreciated.

from Cooking for Engineers:
I will now always pay attention to melting the butter first.
OTOH, I've never greased or lined a pan; there is so much butter in the candy it doesn't have a chance to stick. I do cook it per my handed-down (Hershey's?) recipe to 320 degrees.
Going to try a coffee flavor this year by adding an envelope of Starbuck's new instant, Via.
